Vanderbilt Students Investigate How Food is Medicine

As part of Hunger Action Month, this week Vanderbilt University medical students and dietetics interns who are participating in The Shade Tree Clinic got to visit the Second Harvest Food Bank’s Culinary Arts Center for a special learning session on the theme “Food as Medicine.”

Alongside Second Harvest chefs Mark Rubin and Stephen Belin, the students prepared their own dinner of Asian Stir-fry Chicken, Salmon Croquette, and Roasted Butternut Squash while discussing budget-friendly healthy cooking tips.

The night also included a tour of the Second Harvest Food Bank distribution center, a group case study discussion, and a briefing about when to refer their patients to Second Harvest for services.
